Ingredients

  • 1 cup oat flour
  • 1 egg
  • 2 tablespoons honey (or sweetener of choice)
  • 1 tablespoon coconut oil\
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder

Instructions

1. Preheat the oven to 180 °C (350 °F) and prepare a muffin or mini cake mold.

2. In a bowl, combine all the ingredients until a smooth batter forms.

3. Divide the mixture evenly into 6 molds.

4. Bake for 10–12 minutes, until lightly golden.

5. Let cool before serving.
