Almond Walnut Chocolate Cookies

Ingredients

  • 2 cups almond flour – Just About Foods
  • ⅓ cup finely chopped walnuts (reserve 1 tbsp for topping)
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon Gluten Free Baking Powder
  • ¼ teaspoon salt (optional)
  • ⅓ cup maple syrup
  • ¼ cup olive oil (light flavor)
  • 1 tablespoon cold water
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • ⅓ cup dark chocolate chips/chunks

Instructions

  1. Preheat the oven to 180 °C (350 °F) and line a baking tray.
  2. In a bowl, mix all the dry ingredients.
  3. Add the wet ingredients and mix until a dough forms.
  4. Fold in the chocolate chips and walnuts.
  5. Form into 10 cookies and place on the tray.
  6. Slightly flatten and top with extra walnuts.
  7. Bake for 12–16 minutes, until set on the edges but soft inside.
  8. Let cool before serving (they firm up as they cool).
