- In a mixing bowl, whisk together cassava flour, milk, eggs, melted butter, sugar, and a pinch of salt until smooth and lump-free. Let the batter rest for 15 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour ¼ cup of the batter onto the skillet and swirl it to coat the bottom evenly. Cook for about 1–2 minutes until the edges begin to lift, then flip and cook for another 30 seconds. Repeat with the remaining batter.

In a separate pan, melt 1 tbsp butter over medium heat. Add peach slices and brown sugar, stirring until the sugar dissolves and the peaches caramelize, about 3–5 minutes.
- To assemble, spread mascarpone cheese on each crepe, top with caramelized peaches, and fold or roll as desired. Serve warm.
