Gluten Free Almond Croissants

For the croissant dough

  • 2 ½ cups Just About Foods Gluten-Free All-Purpose Flour
  • 1 teaspoon Xanthan gum 
  • 1 teaspoon Salt 
  • 1 tablespoon Sugar 
  • 1 tablespoon Active dry yeast 
  • 1 cup Warm milk (approximately 40°C) 
  • 1/4 cup Unsalted butter, melted 
  • 1 egg (for egg wash) 

For the Almond Filling

  • 1/2 cup Ground almonds 
  • 1/4 cup Powdered sugar 
  • 1/4 cup Unsalted butter, melted 
  • 1 teaspoon Almond extract 

For the Topping

  • Sliced almonds 
  • Powdered sugar (for dusting) 

Instructions

  1. In a large bowl, combine Just About Foods Gluten-Free All-Purpose Flour, xanthan gum, salt, and sugar. In a separate bowl, dissolve the yeast in the warm milk and let it sit for 5 minutes until frothy. Add the yeast mixture and melted butter to the dry ingredients, and mix until a sticky dough forms. Cover the dough with a clean towel and let it rise for 1-2 hours, or until it doubles in size. 

  1. In another bowl, mix together the ground almonds, powdered sugar, melted butter, and almond extract until smooth and combined, reserve. 

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper. Once the dough has risen, roll it out on a lightly floured surface into a large rectangle (about 30x40 cm). Cut the dough into triangles. Place a spoonful of the almond filling at the base of each triangle and roll up the dough to form croissants. 

  1. Place the croissants on the prepared baking sheet, leaving space between them. Brush with the egg wash and allow them to rise for an additional 30 minutes. 

  1. Bake the croissants in the preheated oven for 15-20 minutes, or until golden brown. 

  1. Once baked, remove the croissants from the oven and let them cool slightly. Sprinkle with sliced almonds and dust with powdered sugar before serving. 

  2. Enjoy while still warm.
