- In a bowl, mix the Heirloom Organic White Corn Flour, hot water, and salt until a soft dough forms.
- Knead until smooth and pliable.
- Divide into 4 portions.
- Take one portion and form a ball, then create a small hole in the center.
- Add cheese inside, close the dough, and reshape into a ball.
- Gently flatten into a thick round disk, making sure it doesn’t break.
- Heat a skillet over medium heat.
- Cook each gordita, flipping occasionally, until golden and cooked through on both sides.
- Serve warm while the cheese is melted inside.
