  1. In a bowl, mix the Heirloom Organic White Corn Flour, hot water, and salt until a soft dough forms.
  2. Knead until smooth and pliable.
  3. Divide into 4 portions.
  4. Take one portion and form a ball, then create a small hole in the center.
  5. Add cheese inside, close the dough, and reshape into a ball.
  6. Gently flatten into a thick round disk, making sure it doesn’t break.
  7. Heat a skillet over medium heat.
  8. Cook each gordita, flipping occasionally, until golden and cooked through on both sides.
  9. Serve warm while the cheese is melted inside.
