Melt butter in a large pot over medium heat. Add the Just About Foods All-Purpose Flour and whisk constantly for 2 minutes to create a roux. Slowly add the vegetable broth while whisking to prevent lumps.

Add broccoli, carrots, and onion to the pot. Stir well and let simmer for 10–15 minutes, or until the vegetables are tender.

Lower the heat and stir in the milk, heavy cream, garlic powder, paprika, salt, and pepper. Simmer gently, ensuring the mixture doesn’t boil.

Gradually add shredded cheddar cheese, stirring continuously until fully melted and the soup is smooth and creamy.
